◾1 pack brick pastry

◾2 small Herve cheeses

◾2 pears

◾Salt and pepper

◾4 soup spoons honey

◾A little rosemary

◾A few chervil leaves

◾4 dabs butter

◾A little sunflower oil

◾4 pieces of string

Opening day(s)

- Unwrap your brick pastry and place it on your worktop (take one or two leaves of pastry per person according to the desired thickness, remembering that one leaf is extremely thin).

- Peel your pears and cut them into small cubes.

- At the centre of each pastry leaf, place a dab of butter, ¼ of your pear cubes, ¼ of your Herve cheese.

- Season with salt and pepper.

- Add some rosemary and your soup spoon of honey.

- Close the pastry leaves in a money-bag shape and tie them using a piece of string for baking.

- Grease the bag with the aid of a brush and bake for 30 minutes at 180°-200° (you can also fry in a pan on a low heat).

- Remove the pieces of string.

- Place the money bags on your plates accompanied by a few leaves of chervil.
