Ingrédients

- 8 quail

- 8 slices smoked lard

- 1.5 dl muscat

- 250 gr unseeded red grapes

- 8 generous slices bread

- 3 soup spoons Liège syrup

- Butter

- Salt, pepper

- Crudités to garnish

Préparation

Gut the quail if necessary.

Melt the butter in a casserole and place the quail in it on their backs.

Fry them for 30 minutes.

Deglaze with the wine, add the syrup along with the grapes.

Season with salt and pepper.

Place the quail on individual plates garnished with crudités and pour on gravy.

Serve with bread.
