La Salade Russe

◾6 pickled herrings (commonly also called "rollmops")

◾1 kg potatoes

◾1 500 gr jar beetroot

◾2 apples

◾2 onions

◾125 gr pickled onions

◾500 gr gherkins

◾6 hard-boiled eggs

◾125 gr roast pork

◾125 gr ham on the bone

◾125 gr walnuts

◾salt and pepper

◾500 gr mayonnaise

◾Lemon juice (optional)

Opening day(s)

◾Wash and cut the rollmops into small cubes.

◾Boil the potatoes (ideally with the peel on – you will remove it afterwards, before dicing the potatoes).

◾Do the same with the beetroot (note: set the juice aside because you will need it afterwards), the apples, roast pork and ham.

◾Slice the drained gherkins and pickled onions into small rounds.

◾Peel and finely chop the onions.

◾Cut the eggs into small pieces and chop the walnuts.

◾Blend the whole mixture with salt and pepper while adding the mayonnaise and little beetroot juice for colour.

Ideally, this salad is made in advance (the day before eating, at least) : it'll be all the better for it!

Serve with a bit of lemon (according to taste), mayonnaise and perhaps a bit of bread...
