Les croustillons liégeois

- 4 eggs

- 500 ml water

- 250 grammes confectioner’s flour

- A few drops vanilla essence

- Icing sugar

Heat the water in a casserole and gradually add the flour to it, stirring well in order to obtain a smooth and consistent dough.

Add the vanilla essence to it and allow to chill.

On the side, beat the whole eggs and fold them into the chilled dough.

Heat the frying oil and plunge your doughy croustillons into it with the help of 2 spoons.

Fry until golden on each side and drain after removal from the fryer.

Dust with icing sugar and serve...
