Les Vôtes al rapeye

For 4 persons - about 8 "vôtes" of 22 cm diameter :

◾1,2 kg potatoes

◾3 whole eggs

◾250 ml milk

◾150 g flour

◾1 teaspoon salt

◾300 g diced bacon

◾sugar (optional for tasting)

◾baking fat (the original recipe advocates the use of lard, nowadays, vegetable fat would be used instead)

Melt the lard in a pan with a little fat but do not make them too brown.

Peel and wash the potatoes.

Grate them finely and collect them in a sieve or colander in order to drain the starch.

Once well drained, pour into a large bowl and add the whole eggs, salt, flour and milk. Mix everything well.

Let the fat melt in a skillet over high heat and pour a ladle of your preparation uniformly so as to get a slightly thick pancake.

Add 2-3 tablespoons of bacon you evenly spread.

Cook each side like a traditional pancake and make sure the inside is well cooked (you are using raw potatoes).

Serve piping hot - with fine sugar for sweet and savory lovers ...

NB : The recipe requires sufficient time for cooking.

The pancakes are even better when prepared in advance and reheated before eating.
