◾250g melting chocolate
◾125g icing sugar
◾Melt the butter and the chocolate, chopped into pieces, in a bain marie.
◾In a bowl, blend the flour and icing sugar.
◾Add 5 eggs and blend until smooth.
◾Delicately pour the butter and chocolate over this mixture.
◾Put out pyrex ramekins (+/- 5cm tall and 7.5cm in diameter).
◾Grease the moulds thoroughly and line them generously with flour.
◾Pour the mixture into 3/4 of the ramekin.
◾Heat the oven to 200°C (gas mark 7).
◾Once the oven is hot, bake for exactly 7 minutes at 200°C.
◾Serve warm with a mandarine coulis, custard or a scoop of vanilla ice cream.
PS: For smaller fondant cakes, you can also use paper cupcake holders (in that case, keep an eye on the baking time...)
