Ingredients (for 2 people):
▪ 500 gr green beans or wax beans
▪ 3 large potatoes (Bintjes or other)
▪ 1 onion (or shallot)
▪ 125 gr smoked lard
▪ ½ dl vinegar (cider or other)
▪ 1 pat butter
▪ Salt and pepper
▪ Chopped parsley
This wholesome, nourishing dish can be an accompaniment to pork chops or fried country sausages.
Boil the potatoes with their skin on.
Chop the onion and parsley. Cut the lard into little pieces.
Wash and top and tail the beans and cook them in salted water. When they are cooked (they must be crisp to the bite!), drain them and put them in a large salad bowl with the chopped onion and parsley.
In a frying pan, melt the butter and add the lardons.
In the meantime, peel the boiled potatoes while they are still hot. Cut them into thick slices and add them to the beans.
When the lardons are golden, add them to the mix with the juice from the frying pan.
Then pour the vinegar into the frying pan, scrape the lard juice with a wooden spoon and allow the vinegar to evaporate to 2/3. Sprinkle onto the salad, gently mix the whole bowl, and serve immediately. Bon appétit!
