◾500 grams of langoustines
◾1 x 140 gram jar of tomato paste
◾500 ml of crème fraîche
◾3 cloves of garlic
◾A few sprigs of parsley
◾A small amount of fat
Shell the langoustines.
Chop the cloves of garlic into small pieces and mix then into the fat.
Add the langoustines and cook thoroughly until they turn pink.
Then add the crème fraîche, tomato paste, salt and pepper.
Leave to simmer for a short while (if you prefer a thicker sauce, you can add a small amount of white sauce thickener).
Serve piping hot with a sprig of parsley, rice, “Ebly” wheat, pasta or bread...
